Ingredients

  • 1 kg pork bones

  • 500 g pork belly

  • 4 eggs

  • 2 tablespoons miso paste

  • 3 tablespoons soy sauce

  • 2 tablespoons mirin

  • 1 tablespoon sesame oil

  • 4 portions ramen noodles

  • 2 garlic cloves, minced

  • 2 green onions, chopped

  • 1 sheet nori (seaweed), cut into strips

Cooking Method

  1. Boil pork bones in water for 10 minutes, then rinse.

  2. Refill pot with water and simmer bones for 12 hours to create a creamy broth.

  3. In a separate pot, braise pork belly with soy sauce, mirin, and garlic until tender. Slice thinly.

  4. Boil eggs for 6 minutes, cool in ice water, and peel carefully.

  5. Cook ramen noodles according to package instructions.

  6. In serving bowls, ladle broth, add noodles, then top with pork belly, eggs, green onions, and nori.
